Dinka Enduro and the safehouse vehicles
A trail motorcycle and a kayak waiting at Jason's safehouse. The kayak's the interesting one.
The Ultimate Edition puts a Dinka Enduro motorcycle and a Crest Kayak at Jason's safehouse, alongside the Vapid Ganado.
The Enduro
It's a green trail bike with knobbly tyres, a high-mounted exhaust and long-travel suspension. Dinka is Rockstar's Japanese manufacturer, broadly its Honda, and an enduro is the bike you take where roads stop being roads.
In a state with wetland tracks, national park trails and the back country around Ambrosia, that's a genuinely useful thing to own, and the looks are a side benefit. It's also small enough to matter under the new weapon storage rules. A bike carries far less than a car, so taking it means deciding what you can bring with you.
Why a kayak's in a paid edition
A Crest Kayak won't get you away from anybody. It's a leisure object, and putting one in a paid edition tells you Rockstar expects people to spend time on the water just for the fun of it.

That lines up with everything else Rockstar's shown. Kayaking and scuba diving both appear in the Extended Look, the Keys screenshots include a full reef with a turtle and a diver, and Mount Kalaga has a river with somebody paddling it.
Red Dead Redemption 2 put a lot of effort into activities with no criminal purpose at all, and that's the main reason people talk about that game as a world they lived in. A kayak in the launch edition suggests Rockstar's after the same thing here.
What isn't known
Rockstar hasn't said whether the Enduro or the kayak exist outside the Ultimate Edition, and it hasn't published any handling detail for either one.
